Coconut Curry Pumpkin Soup

Soup isn't typically what one would think of as a “high-protein food,” especially when it's vegetable based. But, with a little creativity, it's possible to enjoy a spicy-sweet coconut curry pumpkin soup while getting your protein. And, by “creativity,” we mean “Naked Nutrition Pea Protein Powder.” Here's the recipe.
  • 1 scoop Naked Nutrition Pea Protein Powder
  • 1 tbsp extra virgin coconut oil
  • 1 ½ tbsp green curry paste
  • 3 ½ cup pumpkin puree
  • 1 ¾ cup vegetable broth
  • 1 can light coconut milk
  • 2 tbsp brown sugar
  • 2 medium limes
Heat the coconut oil in a large saucepan over medium heat. Once the oil is hot, add the curry paste and cook for one minute, stirring constantly. Add the pumpkin puree and cook for about 2 minutes. Add the broth, coconut milk and brown sugar. Whisk to combine the sugar. Stir in the protein powder and allow the soup to come to a boil. Lower the heat and simmer for 10 minutes, uncovered. Zest and juice the limes, adding both to the soup.
